Instructions

Step 1
Preheat oven to 375 degrees. In a large bowl beat sugars and butter until light and fluffy, about 2 minutes. Beat in eggs, vanilla and peppermint extract until combined. Beat in cocoa powder, baking soda and salt until combined. Beat in flour. Stir in chopped chocolate and mint chips.

Step 2
Drop dough by 1/4 cup portions 3 inches apart onto parchment lined baking sheets. Bake 7 minutes. Remove and firmly tap 3 times onto counter. Return to oven and bake 2 minutes more until center is just set. Repeat tapping, then let cool for 2 minutes on cookie sheet.
Step 3
Make ganache by pouring warmed heavy cream over chocolate chips and peppermint extract then stirring until melted and smooth.
Step 4
Spread with peppermint ganache and crushed candy cane kisses.
