Instructions
Step 1
In a large bowl, combine 2 cups flour, the sugar, salt & yeast. Blend well
Step 2
In a microwave safe container, heat water and milk until warm (100-130). Cut in the butter and stir to allow the butter to melt and the liquid to cool. (Or simply heat all 3 ingredients together).
Step 3
When the butter is melted and the liquid is warm (not hot, or it will kill the yeast), add the liquid and eggs to the flour mixture.
Step 4
Beat 3 minutes at medium speed.
Step 5
Stir in additional flour until dough pulls away from the sides of the bowl.
Step 6
Knead the dough for 8-10 minutes.
Step 7
Place dough in greased bowl, turning dough to grease all sides. Cover and let rise for 45-60 minutes.
Step 8
Punch down. Divide dough and shape into 24 rolls. (See notes for Krissy's technique) Lay them in 2 greased baking dishes just a little apart.
Step 9
Cover & let rise 20-30 minutes. They should double in size and will be touching.
Step 10
Bake at 400 F for 15-20 minutes, but if your rolls are smaller, keep an eye on them at about 10 minutes. Rolls are done when golden brown on top. Butter the tops while hot.
Krissy's Roll Shaping Technique

Roll piece into a ball between hands or on counter. Hold the ball by the bottom with one hand. With the other hand, hold index finger and thumb in the shape of a small O at the top. Spread fingers apart around the shape of the ball while pulling the outside layer of dough from the top to the bottom. Pinch and tuck at the bottom and be sure to place that seam down in the pan. Kind of like turning it inside out. This removes cracks and seams from all sides except the bottom.
