Once a week, I pack lunch boxes for our boys. Since it is only once a week, I try to make it a little more special for them. Today, I will share one of the menus I used for the lunch boxes, which is a hotdog Kimbap with fried egg and lettuce. It is colorful and tasty, so our boys love it.

2 cupsshort grain rice

Step 1
Fry 2 pieces of your favorite hotdog. I recommend you get about 6-7 inch hotdogs for this recipe.
Step 2
Break 2 eggs and mix them with 2 pinches of salt. Fry flat egg. If you have a square pan, it is the best, however if you have normal round shape pan, you can also use it too.
Step 3
Divide the fried egg into 4 pieces. Each piece can be about 3.5 x 3.5 in. square piece.
Step 4
By now, the hotdogs will be fried nicely. Cut the hotdogs in half.
Step 5
Prepare 2 sheets of dried laver for Kimbap or Sushi and divide them in half lengthwise.
Step 6
Finally, prepare about 1.2 oz of green leaf lettuce.
Step 7
Add 2 cups of cooked short grain rice, ⅛ generous tsp of salt, 1 tsp of sesame oil, and 1 tsp of sesame seeds into a mixing bowl. Mix everything well and divide them into 4 portions.
Step 8
Place a piece of dried laver on a bamboo mat and spread one portion of the rice all the way up to the top except for a remaining about 2 inch of empty space.
Step 9
Put about 0.3 oz of lettuce on the rice. You also need to leave little bit of space on the rice without covering it all with the lettuce. This way it helps the Kimbap form the shape tightly and neatly.
Step 10
Put a piece of the fried egg on the lettuce. Then, put the hotdog on the egg.
Step 11
Now roll the kimbap tightly. At the end of the rolling, you will get the dried laver part without anything on it. Put little bit of water onto it, so it will help the Kimbap seal it well.
Step 12
Finish rolling with your hands and then roll the Kimbap with the bamboo mat one more time. Squeeze it gently to form the Kimbap shape graciously.
Step 13
If you love the sesame oil flavor, then you can brush a little bit of it onto the Kimbap surface before cutting it. Slice the Kimbap into your desired size. Wow, it looks so cute and appetizing.
