Step 1
Preheat your oven to 180°C (350°F) and grease a 9×5 inch loaf pan.
Step 2
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
Step 3
In a separate bowl, whisk together the mashed bananas, sugar, melted vegan butter, flax eggs, and vanilla extract.
Step 4
Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix. (Fold through chocolate chips here if using)
Step 5
Pour the batter into the prepared loaf pan and bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Step 6
Let the bread cool in the pan for 10 minutes before removing and transferring to a wire rack to cool completely.
