Sicilian chicken pasta with sun dried tomato sauce

Send your taste buds on a journey to the beautiful region of Sicily. A rich and creamy sauce is livened up with tangy sun dried tomato pesto, fresh spinach and Parmesan cheese and studded with golden Brown chunks of chicken. Who needs needs to get on a plane when you can find all these delicious flavours right at home!

Instructions
Step 1
Bring a large pot of salted water to a boil. Wash and dry all produce.


Step 2

Roughly chop spinach.


Step 3
Peel then cut onion into 1/2 inch pieces.


Step 4

Cook penne for 10-12 minutes, until tender but still firm to the bite. When penne is tender, reserve 1/2 cup pasta water.




Step 5
Strain penne, then return to the pot, off heat. Toss penne with two tablespoons of oil.


Step 6
Pat chicken dry with paper towels. Season with salt and pepper.

Step 7

In a large non stick pan, heat 1 tablespoon of oil over medium heat. When the pan is hot, add chicken. Cook chicken for 3 to 4 minutes per side, until golden brown and cooked through.



Step 8
Transfer chicken to a cutting board to cool. Once cool, cut into 1" pieces.


Step 9
In the same pan heat 2 tsp of oil over medium. When the pan is hot add onions. Cook for 4-5 minutes, stirring occasionally, until softened. Season with salt and pepper.



Step 10
Increase heat to medium high, then add cream sauce spice blend and 2 tablespoons of butter. Cook for 2 to 3 minutes stirring frequently, until thickened.



Step 11

Add 1 cup of water, 3/4 of the parmesan, chicken stock, sun dried tomato pesto, and reserved pasta water. Cook for 4-5 minutes, stirring occasionally, until sauce thickens.




Step 12
Add sauce, spinach and chicken to pot with penne. Stir until spinach wilts.




Step 13

Divide pasta between bowls, sprinkle remaining parmesan over the top and enjoy!
