2 Cupsrice
pre cooked preferred

1egg
beaten

3 rashersbacon
chopped

1onion
small, chopped

2 clGarlic

1 cupbean shoots
optional

½ cupfrozen peas

1 Tsoy sauce
may need more

1spring onion

1 Tbspoil

veggies
may also add any other, diced carrots, sweet corn, capsicum, cauli, cabbage, celery, asparagus also add sesame oil, ginger, fish sauce

Instructions
Step 1
Cook rice, cool overnight uncovered in fridge.
Step 2
Heat ½ teas oil...(you might add a few drops of sesame oil too.) in frypan and cook beaten egg until set.
Step 3
Remove and cut into small pieces.
Step 4
Add remaining oil and fry bacon, onion, garlic and ginger until onion is transparent.
Step 5
Add remainder of vegs. except bean shoots and peas. And cook for a couple of minutes.
Step 6
Add rice and stir well. Add bean shoots, and frozen peas. Cook for a further minute.
Step 7
Add soy sauce and egg pieces. Stir.
Step 8
Serve and garnish with parsley.
