Slow Cooker French Dip Sandwiches
I wrote this down from a source online a long time ago. No idea where it’s from or if I made any changes. It’s really good though!

Ingredients
4 servings

3green onions
chopped

2 tspfresh thyme

1clove garlic
crushed

1 tspkosher salt

1 tspblack pepper

¼ tspcelery seeds

¼ tspground allspice

2.5 lbbeef eye round roast
trimmed of excess fat

2carrots
sliced 1 inch thick

2 tbworcestershire sauce

1 cubebeef boullion

8kaiser rolls

horseradish sauce
creamy, condiment

Spicy mustard
condiment

kitchen twine

1 ½ cwater
Instructions
Step 1
Pulse green onions, thyme, salt, pepper, celery seeds & allspice in a food processor to form a paste.








Step 2

Pierce the roast with a paring knife, rub with the spice paste and tie with kitchen twine.


Step 3

Spread carrots in the slow cooker bowl and set the roast on top.


Step 4

Combine 1 1/2 C water, Worcestershire sauce and boullion cube. Microwave until hot (2 to 4 minutes). Add to slow cooker.





Step 5

Cover & cook LOW 2 hours. Transfer meat to a cutting board, cover with foil and allow to sit for 15 minutes. Spoon off excess fat from cooking liquid.


Step 6

Remove twine & thinly slice meat. Spread horseradish sauce or spicy mustard on the rolls if desired. Layer with slices of beef & serve with extra liquid for dipping.
