Chickpea and Spinach Scramble with Bell Peppers

Instructions

Step 1
Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, and red bell pepper and sauté until tender, about 5 minutes.
Step 2
Add the chickpeas to the skillet and cook for an additional 2-3 minutes, stirring occasionally. Add spices and cook until chickpeas are golden brown on medium heat.
Step 3
Add the chopped spinach to the skillet and stir until wilted.
Step 4
In a separate bowl, whisk together the eggs, salt, and pepper.
Step 5
Cook the eggs separately then combine with veggies at the end.
Step 6
In a separate bowl, add the houmous, lemon zest and lemon juice and combine. Drizzle over the top before serving.
Step 7
Top with crumbled feta cheese, if desired.
Step 8
Serve warm and enjoy!
