Instructions

Step 1
Heat a pan on medium-high heat, add the olive oil then the mushrooms and 50ml water.

Cover and steam for 5mins

Meanwhile in a large bowl, mix the flour, 200ml water and sea salt to form a dough. Knead for a few mins then roll out to the size of the pan.

Uncover the pan and add the mango chutney. Shake the mushrooms into a thin layer.

Place the dough on top, gently tucking in at the edges.

Cover and cook for 5mins on medium heat until puffed up and cooked through.
Step 7
While it cooks, put the yoghurt and half the coconut into a blender with the juice of 1 lime, the coriander and spring onions.

Blitz until smooth, season and put into a bowl for dunking, sprinkling the remaining coconut on top.
Step 9
Turn out the mushroom bun, sprinkle the remaining coriander leaves and serve with the lime wedges and the dip.
