Black Sesame Financier
Tuile (Black Sesame)
Sugar 50g, Black sesame 50g, Egg white 30g, Cake flour 6g, Melted butter 10g
Simply mix everything together with melted butter added last. Make sure you rest it overnight and use it the next day. Pipe it above the financier batter and bake together with the financier.

Step 1
Prepare large bowl of cold water

Grease pan with butter (put more butter)

Make brown butter, prepare sieve
Step 4
Add egg white > honey > sugar into a bowl and whisk gently until sugar has sort of dissolved.

Once the mixture looks well mixed, sift in the almond powder/cake flour/baking powder

Add brown butter of 40°C and mix well.
Step 7
Add sesame paste
Step 8
(Optional) Rest batter in fridge for 1-2h for deeper flavour
Step 9
Pipe batter into pan 80-90% height
(Start preheating oven)
Step 10
Pipe tulie on top, thinly and sufficiently, with tip
Stir before putting into piping bag
Step 11
Bake at 180°C for 9~15mins
(Pre-heat to 200°C)
