Instructions
Step 1
In a pot on high heat put water, onions, mastic, cardamom, stock, bayleaves let it boil then add the chicken and leave while covered for 1 hours
Step 2
Strain 2 cups of soup and set aside
Step 3
In another pot put tbsp ghee and tomato sauce for 4 to 5 mins on medium heat then add the soup
Step 4
Crush the garlic head with the corriander powder put half to the soup let it boil for 15 mins then add the molokheya but keep the pot open (NEVER COVER the molokheya) let it boil with the soup then turn off the heat
Step 5
In a pan tbsp ghee and the other half of the garlic on medium heat till golden brown and add to the molokheya right before serving
Extra side dishes
Step 6
take the chicken used to make the chicked soup out of the put add some ketchup and lemon to it and fry it serve it with the molokheya as a side dish
Step 7
In a pot add some oil and vermicelli keep stirring till golden brown then strain the excess soup onto it to make vermicelli soup
