Instructions

Step 1
Remove the heads of the garlic bulbs, place on a baking tray and drizzle with olive oil. Season with salt, pepper, and thyme. Cook at 180c for 45 minutes.
Step 2
Once cooked, remove the garlic and squeeze the cooked insides into a bowl, the mix to make a paste.
Step 3
Season the chicken breasts and sear in a frying pan for five minutes on each side. Remove from the plan and place to one side.
Step 4
Add the white wine, butter, and garlic paste to the pan. Add the mushrooms and stir until coated. Cook until softened, then add the chicken stock and cream to the pan.
Step 5
place the chicken back to the pan, cover and cook for 15 minutes. Garnish with fresh parsley and serve.
