Chicken Thighs Prep
Peanut Sauce
½ cuppeanut butter
¼ cupsoy sauce
⅓ cupwater
warm
2 Tbspginger
minced
1clove garlic
minced
2 Tbsprice wine vinegar
1 ½ Tbspsesame oil
2 tsphoney
1 Tbsptoasted sesame seeds
1 Tbspchili oil
Zucchini Noodles Prep
Instructions
Step 1
Preheat the oven to 425 degrees F. Toss the chicken with olive oil, salt and pepper until evenly coated. Cook for 25 minutes.
Step 2
Soften peanut butter in microwave for 15-20 seconds on high. In a bowl whisk together peanut butter, soy sauce, water, ginger, garlic, vinegar, sesame oil, honey and chili oil.
Step 3
Add olive oil to a pan and sauté the zucchini noodles and scallions for 4-6 minutes.
Step 4
Remove from heat, and mix the peanut sauce into the pan. Once chicken thighs are cooked, slice and add to the pan.
Step 5
Top with sesame seeds and scallion tops.
