Step 1
Preheat a griddle pan over a high heat. Lay the chicken between 2 sheets of clingfilm then bash with a rolling pin to flatten. Season with salt and pepper then lay on the griddle and cook for 3 minutes on each side or until cooked through, then set aside to rest.
Step 2
Throw the broccoli on the griddle and cook for 4-5 minutes until lightly charred and softened.
Step 3
Meanwhile put the oil, garlic, basil, pumpkin seeds and Parmesan into a small food processor and blend until smooth (add a little splash of water or rocket leaves to loosen if needed), toss the chicken, broccoli and pesto together in a large bowl and serve on a bed of rocket.
