Instructions
Step 1
1. Preheat oven to 375F. Grease baking dish.
Step 2
2. Chop or slice raw chicken, onions, and bell peppers and place in a mixing bowl.
Step 3
3. Top chicken and veggie mixture with Fajita seasoning, olive oil, garlic powder, and smoked paprika. Mix well and set aside.
Step 4
4. Cover bottom of baking dish with layer of dry yellow rice. Pour chicken broth over rice.
Step 5
5. Evenly cover rice layer with chicken and veggie mixture
Step 6
6. Cover baking dish with aluminum foil and place in oven (375F) for 1 hour.
Step 7
7. Uncover and check if chicken is cooked through. You may want to broil for a few minutes uncovered for additional browning before serving.
Step 8
8. Add salt and pepper to taste
