Step 1
Preheat oven to 375F
Step 2
In a mixing bowl, add 1lb of lean ground beef.
Step 3
Next, add 1 can of drained black beans, 1 can of Ro-Tel, half a chopped white onion, and 1 cup of corn.

Season with a packet of taco seasoning.
Step 5
Add 1 cup of white rice.
Step 6
Pour in 2 cups of low sodium beef broth.
Step 7
Mix all the ingredients in the bowl throughly.
Step 8
Pour the mixture from the bowl into a greased 9x12 baking dish. Smooth out the ingredients so that the whole dish is an even height.
Step 9
Cover the baking dish with a tin foil and put in the oven at 375F for 45 minutes.
Step 10
Take out the oven, remove the tin foil, stir, and top with shredded Mexican cheese blend.
Step 11
Bake for a further 15 minutes.
