Step 1
Preheat oven to 200C(fan)
Step 2
Cut the puff pastry into 12 equal squares
Step 3
Working with the one puff pastry square at a time, cut 4 square corners( watch the video for the visual instruction)
Step 4
Spread 1/2 tsp of custard on the inner square, then 1/2 tsp of berry coulis( or jam)
Step 5
On the middle of each square outer side place one berry of your choice.
Step 6
then fold the edges to the centre of the square.
Step 7
Add 1/2 tsp of custard to seal and place berry on top.
Step 8
Combine egg yolk with milk and brush the puffs.
Step 9
Sprinkle crushed pistachios on top and bake for 15 minutes.
Step 10
When ready, let them cool and sprinkle them with icing sugar.
