Filet mignon w/ herb butter

Instructions

Step 1
Generously salt both sides of the filet then refrigerate up to 2 hours
Step 2
Grate the garlic, Add fresh parsley and dried oregano to the room temperature butter. Take plastic wrap and mold into a log or add to a small bowl. Then refrigerate until firm
Step 3
Remove steak from the fridge and pat dry
Step 4
Add salt and pepper to both sides
Step 5
Heat a cast iron pan and add equal parts olive oil and butter
Step 6
Pan sear for about two minutes on each side then finish in a 400 degree oven until desired internal temp is reached (130-140 for medium rare)
Step 7
Let the steak rest covered for a few minutes before serving.
Step 8
Top with herb butter
