Carrot Sauce:
3carrots
large, chopped
2 ClovesGarlic
Unpeeled
0.33Brown Onion
Quartered
Olive Oil
salt
pepper
0.33 CupCashews
Soaked in hot water for 5 minutes and drained
0.25 CupNutritional Yeast
2 TbspMiso Paste
2 TbspTahini
2 TbspLemon Juice
0.25 TspSmoked Paprika
1.5 CupWater

Instructions
Step 1
Preheat oven to 200°C and line a baking tray. Spread carrot, onion and garlic on the tray, drizzle over olive oil and season with salt and pepper. Roast carrot in the oven for 40 minutes, turning over halfway, or until slightly charred and fork tender. Remove the onion and garlic at the 20-25 minute mark, or until tender and browned.
Step 2
Peel garlic skins. Place roasted carrots, onion and garlic in a food processor with all other sauce ingredients. Blend until thick and smooth. Add more water if needed.
Step 3
Cook pasta according to package instructions. Drain and mix through the sauce. Serve and garnish with parsley and pine nuts. Enjoy! Store in the fridge for 3-4 days.
