Croutons
Step 1
Oven 350. Cut baguette into ¾" cubes and spread on baking sheet. Toss with 1 Tbsp oil, ¼ tsp black pepper, and ⅛ tsp salt. Bake until golden brown, approximately 15 min. Cool completely.
Salad
Step 2
Cut kale away from the stalk then chop into 1" pieces. Transfer to a lg. bowl and massage until darkened and slightly wilted.
Step 3
In blender, process mayonnaise, vinegar, worcestershire, dijon, ¼ cup parmesan, lemon juice, anchovies, garlic, ¼ tsp salt, and ¼ tsp pepper until smooth. With blender running, slowly add 2 Tbsp. oil.
Step 4
Pat dry and season chicken. Heat 1 Tbsp oil in 12" nonstick skillet. Brown chicken on both sides. Rest under foil.
Step 5
Toss kale, dressing, and croutons with ¼ cup parmesan. Slice chicken thin and arrange over salad.
