Instructions
Step 1
Make brown butter and let cool.
Step 2
In a bowl mix eggs, sugar and vanilla. Add honey.
Step 3
In another bowl mix flour and baking powder.
Step 4
Add the flour and baking powder mixture to the egg, sugar, honey and vanilla mixture. Mix well.
Step 5
Add the brown butter to the dough.
Step 6
Let the dough cool overnight.
Step 7
Preheat the oven to 200°C.
Step 8
The next morning take out the dough and put it in madeleine moulds.
Step 9
Place the mold on a hot plate in your oven. Bake for 4 minutes at 200°C then lower the temperature to 180°C, cook for another 6 minutes or so.
Step 10
Once out of the oven, unmold the madeleines by tapping the mold on the work surface.
Step 11
Let them cool on a flat surface, dent side up.
