Aicha was born and raised in Morocco, this is a family father recipe she learnt from her parents. It's one of the most popular dishes in the Moroccan cuisine. It's a must when you entertain people in your house. The guests will just fill you with compliments. It is full of flavours: the saffron, the lemon and the onions cooked this way gives it a superb taste.

Ingredients

1whole chicken
3onions
large
4cloves of garlic
2 Tbspfresh parsley
3 Tbspfresh coriander
½ cupolives
red or green
15 threadsSaffron
1 Tbspginger powder
1 tspsalt
½ tspblack pepper
2 tspturmeric
or curcuma
1lemon juice
0.5preserved lemon
use the pulp and keep the peel for decorating the dish
1 tspharissa
or any good hot sauce
4 Tbspolive oil
butter
for brushing the chicken before putting it in the oven
Instructions
Step 1
First wash the chicken with lemon and salt , let it rest for 10 minutes then rinse it and dry it with kitchen towels.
Step 2
To make the marinade: in a food processor, put parsley, coriander, garlic, lemon juice, the pulp of the preserved lemon, and all the rest of the spices. Add 4 tbsp of water and blend ( 10 seconds pulses 2 to 3 times).
Step 3
Take the chicken, use the marinade by massaging gently the whole bird and under the skin as well . Let it rest for a minimum of 30 minutes ( better longer time for marinade)
Step 4
Cut the onions finely
Step 5
Put a cooking pan on the stove, add olive oil, and the chicken with all the rest of the marinade and a 1/4 cup of water. Leave it to cook for 20 minutes.
Step 6
Remove the chicken from the pan and pour the chopped onions to cook in the same pan.
Step 7
In an oven tray, put the chicken, brush it with butter and stick it in a preheated oven for 30 minutes on a 220C
Step 8
Stir the onions every now and then for 25 minutes until they are melted and absorbed all the juices.
Step 9
When the chicken golden brown, it is ready.
Step 10
In a serving plate , put first the onion sauce, then the chicken (whole or in parts) decorate with preserved lemon peel , fresh lemon and the olives .
