Ingredients

2 lbchuck roast

2 tspsalt

1 tspblack pepper

½ tspcelery salt

½ tspgarlic powder

3 Tbspolive oil

5 Tbspbutter
separated

1yellow onion
diced

5cloves garlic
minced

1 cupred wine
cabernet or merlot

4 cupsbeef broth

3 Tbsptomato paste

2 tspbouillon

large, peeled and cut into chunks

1 lbbaby Yukon potatoes
cut into quarters

2bay leaves

2 sprigrosemary

1 cupfrozen peas

¼ cupwater
cold

3 Tbspcorn starch
Instructions
Step 1
Season meat on both sides with salt, pepper, celery salt. and garlic powder.
Step 2
Heat olive oil in a large pan over medium-high heat. Place seasoned meat in pan and don’t touch for 4 minutes, ensuring a good sear.
Step 3
Flip over and sear for 4 more minutes. Transfer to the slow cooker.
Step 4
Melt 1 tbsp butter in the same pan over medium heat. Add diced onions and cook for 4 minutes. Add minced garlic and a splash of wine, scraping up any brown bits.
Step 5
Transfer onions to slow cooker. Add the remaining wine. Then the remaining 7 ingredients (except for the peas, water, corn starch).
Step 6
Turn slow cooker to low heat and cook for 8 hours. Add the frozen peas in the last 15 minutes.
Step 7
Combine cold water and corn starch. Slowly add mixture to slow cooker and stir well. Turn off heat and add 2 tbsp cold butter. Enjoy!
