Step 1. Halve and par boil potatoes

Step 2 . Chop all veg and generously season combine with glug of olive oil

Step3 . Drain potatoes and combine with veg add juice of half a lemon and half the zest

Step 4 . Put into roasting tray adding salmon fillets adding rest of zest to fillets
