Instructions
Step 1
Preheat an oven to 350°F.
Step 2
In a medium bowl, whisk the eggs and cream until light and fluffy. Season with salt and pepper and set aside.
Step 3
Heat the oil in a medium oven safe skillet. Saute the mushrooms about 4 minutes. Add the tomato and spinach and saute until spinach wilts. Season with salt and pepper.
Step 4
Pour the egg mixture over the veggies. Top with cheese, if desired. Bake in the oven for about 25 minutes or until eggs are fully cooked!
TIPS
Step 5
If you do not have an oven safe skillet, transfer the veggies after sauteing to a baking pan, pour eggs over top before baking in the oven.
