The macadamia nut is considered to be one of the world's finest nut! Malawi accounts for 3 percent of the world's macadamia nut output and is the third largest producer in Africa of macadamia, which has higher earning potential than other crops. This recipe was put together by Chef FRANK at Pumulani Lodge on the shores of Lake Malawi. Chef Frank has been working at Pumulani Lodge for 6 years and raised through the ranks quite rapidly due to his willingness to learn and passion for the kitchen. His on the job training got him to where he is today: the Head of Department of the kitchen. When he is not in the kitchen he enjoys watching action movies. His Macadamia Nut Pie using locally sourced macadamia nuts is a real hit with the guests. Recipe makes 12 individual tarts.

Step 1
Add the flour and baking powder into a bowl, and then stir in the castor sugar.
Step 2
Rub in the butter until it resembles breadcrumbs.
Step 3
Stir in about a ¼ cup of cold water and mix to form a stiff dough.
Step 4
Turn onto a floured board and lightly kneed into a smooth dough. Rest in the fridge for 30 minutes.
Step 5
Roll out and cut into discs to line your greased muffin tray.
Step 6
Add roughly chopped macadamia nuts to cover the base of each muffin case.

Mix the flour, cornflour and egg (lightly beaten) together.
Step 8
Heat the butter and syrup until it melts.
Step 9
Once sugar mixture is slighty cooled, combine it with the flour mixture until you have a smooth batter.
Step 10
Spoon the batter over the prepared muffin cases.
Step 11
Bake in the oven for 15 – 20 min at 180 C until golden brown.
Step 12
Serve with ice cream.
