Instructions

Step 1
Season chicken ( I like to use boneless skinless to reduce fat) with 1 Tbsp paprika, 1 Tbsp garlic powder and 1 Tbsp salt
Step 2
Sear chicken on both sides in a bit of oil, cooking halfway through. Remove chicken from pan.
Step 3
Sauté chopped bell pepper and onion (sometimes I’ll add in a few handfuls of spinach). Add minced garlic cloves. Cook until fragrant. Melt 2 tbsp of butter and add 2 tsp paprika, garlic powder, chili powder, and salt to taste.
Step 4
Add 2 cups of washed rice and 3 cups of water. I like to do half water and half bone broth. I also add just a bit more liquid than 3 cups, because I like my rice soft.
Step 5
Bring to a boil then add chicken back in. Cover the pan, reduce heat, and cook for 15 minutes.
