This Zambian Chapati is a traditional recipe, introduced by the Indian traders and settlers many years ago. Chapati is an unleavened bread that is eaten with any curry or can also be used as a wrap. Making it with wholewheat flour and olive oil makes it a healthy traditional option.

Instructions
Step 1
Wash and peel the onions, dice them small. In a mortar, pound the onion until it is partly a paste then scrape into a bowl.
Step 2
In a wide bowl, sift the flours, baking soda, and salt together, then add the pounded onion.
Step 3
Mix everything together and then slowly add water and knead to a stiff dough.
Step 4
Continue kneading well till the dough is soft and well kneaded.
Step 5
Cover with a cloth and rest for half an hour.
Step 6
Divide the dough into small orange sized balls. Dust well and using a rolling pin, roll out as discs.
Step 7
Heat up a tawa (griddle or frying pan) on medium heat. When the pan is hot, place these discs on the griddle and cook. After a couple of minutes, when you find the bubbles coming up, flip to the other side and cook again.
Step 8
Apply oil sparingly on both sides and cook till golden brown on both sides.
Step 9
Serve with side dish hot.
