Crispy Smashed Herb Potatoes

These dairy free crispy smashed potatoes are the perfect side dish 🙌🏻 I made these the other night to go along with roasted chicken and was thrilled with how amazing they turned out! They were crispy on the outside, fluffy on the inside and super flavorful.

Instructions

Step 1
Wash your potatoes and poke lots of holes in them for steaming and then pop them in the microwave for about 8 min.
Step 2
Remove from the microwave and smash down (I used a mason jar). Then drizzle with olive oil and place in the air fryer at 390 for 20 min, flipping halfway through.
Step 3
While air frying, mix your Italian seasoning with olive oil, chopped garlic (or garlic olive oil), salt & pepper and set aside.
Step 4
Remove from the air fryer and drizzle with olive oil and herb mixture. Then sprinkle with dairy free parmesan & enjoy!
