Instructions

Step 1
Preheat oven to 400 F. Wash and peel potatoes.
Step 2
Cut potatoes lengthwise in half and then cut again into quarters to make even sized wedges. Place potatoes in a deep baking dish, making sure not to overcrowd the dish.
Step 3
Sprinkle salt, pepper, and dried oregano over potatoes. Mix together using your hands to ensure potatoes are evenly coated in seasonings.
Step 4
Peel garlic cloves and press lightly with the back of your knife to crush each clove. Place garlic cloves throughout the potatoes.
Step 5
Place in the oven uncovered for 45 minutes, don’t open the oven.
Step 6
Remove from the oven and transfer potatoes to a separate baking sheet. Return to the oven for 35 more minutes, flipping halfway.
Step 7
Halfway through cooking, flip the potatoes to ensure both sides get crispy.
Step 8
Place the baking dish with the liquid back in the oven for 15 minutes. It will become a thick garlic-oil to drizzle over the potatoes.
Step 9
Remove potatoes from oven and garnish with lemon zest and fresh oregano leaves. Serve Greek potato wedges with lemon slices and garlic-oil for drizzling.
