Ingredients

1.75 lbsbeef stew meat
salt
pepper
2 tablespoonsvegetable oil
1 ½ cupsonion
chopped
1red bell pepper
seeded and chopped
0.5habanero chilies
seeded and friendly chopped
2garlic cloves
minced
1 Tbspground cumin
2 tablespoonsfresh ginger
grated
2carrots
diced
2sweet potatoes
1-in chunks
14 ozfire roasted diced tomatoes

2 tablespoonsground flaxseed
3 Tbspcreamy peanut butter

Instructions
Step 1
Toss beef with two teaspoons of salt cook in Dutch oven until brown on all sides
Step 2
Remove beef add remaining tablespoon of oil onion bell pepper and salt cook until onions are soft
Step 3
Add chili garlic ginger and cumin cook until fragrant 1 minute
Step 4
Add carrots yams tomatoes beef and any accumulated juices with 4 cups of water to the pot
Step 5
Bring to a boil and then reduce to simmer until beef is tender about 1 hour and 20 minutes
Step 6
Add peanut butter and black pepper stir until smooth
Step 7
Reseason with salt if needed divide them serving bowls top with chopped peanuts and lime wedges
