Karedok is Indonesian peanut-dressing-based-raw-salad that symbolizes the people's closeness to mother nature's resources. Compared to gado-gado that contains cooked vegetables and saucy dressing, karedok only uses raw vegetables and thick dressing.
The main vege that you must use is sprout (any kind of sprout), long beans, and lettuce. You definitely can mix and match other kind of raw vegetables you want.
Make sure all the veggies are washed thoroughly to prevent any food borne illnesses.
Use LESSER GALANGAL, not GALANGAL as they are different in flavor.

TIPS:
1. Some people may not tolerate the strong spice level, therefore adjust accordingly.
2. 100% peanut provide the best and authentic taste. If you want to mix with other nut, just replace 10% - 20% of the peanut.
3. Roast the peanut until deep browned for maximum taste and flavor.
4. Add more water to the peanut dressing until the consistency is like a cookie dough but slightly softer.

Make The Tamarind Paste First
Step 1
Combine tamarind with water. Mix.
Step 2
Strain the thick liquid.
Making Peanut Dressing
Step 3
Put all the ingredients for the peanut dressing, including the tamarind paste in a food processor.

Step 4
Blend all the ingredients until it forms a thick paste like a soft cookie dough. You can slightly adjust the consistency according to your liking.
Prepare The Veggie
Step 5
Make sure all the vegetables are thoroughly washed.
Step 6
Cut all the ingredients (except basil) thinly for easier chew.
Step 7
Set aside.
Serving
Step 8
Combine all the peanut dressing with the vegetables on a bowl.
Step 9
Mix evenly.
Step 10
Transfer to a serving plate and sprinkle with fried shallot.
