Instructions
Step 1
Preheat oven to 180 degrees
Step 2
Crisp the flatbread in the oven for 5 minutes
Step 3
Finely dice your tomatoes and add to a large bowl

Finely slice your radishes, cucumber, spring onions and cut the avocado in chunks. Add all to the bowl

Pit and finely chop your olives and add them to the mixing bowl

Finely chop the mint and parsley and add to bowl

Now add the marinaded feta to the bowl

Get 4 tablespoons of Greek yoghurt into a jar, and add the zest of 1 lemon. Grate the garlic clove in.
Step 9
Juice 1 lemon. One half goes in the yoghurt, the other in the mixing bowl. Give it a good mix

Dress the salad in 2 tablespoons of olive oil
Step 11
Cut or tear the flatbread into pieces and add into mixing bowl
Step 12
Sprinkle 1 teaspoon of sumac into mixing bowl and gently toss with salad servers
Step 13
Top with the yoghurt and sprinkle some extra sumac on top
