The Cheesiest Baked Pasta Ever - Joshua Weissman

Ah yes, lasagna's cousin... or well not really but this is a much easier, arguably cheesier, casserole style pasta dish that is full of well... lots of cheese, rich meaty tomato sauce, and of course ziti pasta. But we are taking it several steps further to take it far beyond what it normally is.

Instructions

Step 1
In a 5 quart pan, add 2 tbs of vegetable oil and heat until hot. Then add 1 pound of Italian sausage and 1/2 pound of ground beef. Let seer to 2-3 minutes, then flip and seer until brown. Then, mash with a potato masher and cook over medium-high heat until the fat begins to render out. Remove from pot and place to the side.
Step 2
Add 3 tbs of Olive Oil to the pot, as well a 1 diced sweet onion. Season with salt, and then sauté everything for around 3 minutes. Add 4 cloves of finely chopped garlic. Sauté that for 20 seconds, then add the meat back and stir together.
Step 3
Add 1.5 24 ounce cans of crushed tomatoes. Stir together and let that simmer for about 5 minutes, or until slightly reduced. Then add a small amount of sugar to reduce the acidity.
Step 4
Separately, get a pot of water and seasons generously with salt. Once boiling, add in 1 pound of dried ziti pasta. Cook until just under al dente (so about 1 minute less than the recommended cooking time). Then transfer the pasta into the sauce and stir together.
Step 5
In a separate container, make the cheese. Mix 14 ounces of fresh mozzarella, grated with 4 ounces Parmigiano-Reggiano, grated. Toss them together.
Step 6
In a 9x13 baking dish, spray with non-stick, then layer in half o the pasta and sauce, spreading until even. Then add half a 15 ounce of full-fat ricotta in random spoon fills. Then cover with the cheese mixture. Then do the same thing, but with the other half of the ingredients.
Step 7
Heat oven to 375 F and place dish in for 35 minutes. Afterwards, let the dish cool for 15 minutes before serving. Add fresh basil if desired.
