1 lbground lamb

½ cupyellow onion

2cloves garlic
fresh

¼ cupfresh parsley

¼ cupfresh mint

¼ cuppanko breadcrumbs

⅛ cuppine nuts

1 tablespoonolive oil

½ teaspoonsalt

½ teaspoonground green cardamom

½ teaspoonground sumac

½ teaspoonground nutmeg

½ teaspoonpaprika

½ teaspoonground cinnamon

½ teaspoonground coriander

½ teaspoonground allspice

⅛ teaspooncayenne pepper

¼ teaspoonground ginger

¼ teaspoonblack pepper

⅛ teaspoonground cumin
Instructions
Step 1

Add onion, garlic, fresh herbs, pine nuts, and Panko bread crumbs to food processor. Process on low speed until finely chopped.







Step 2
Add processed mixture to bowl with spices and 1/2 of olive oil and mix
Step 3
Add meat to seasoning mixture and mix by hand, being careful not to overwork.
Step 4
Divide seasoned lamb mixture into roughly 1/8lb koftas.
Step 5
Preheat remaining in olive oil in pan over medium to medium-high heat
Step 6
Cook koftas for roughly five minutes, browning evenly.
