Barley salad - Broccoli, tomato and shrimps

Barley salad is always a perfect solution for a healthy lunch. You can prepeare it a day before and have it ready for your office lunch or a picnic. This version is with broccoli, tomato and shrimps.

Instructions
Step 1
Clean the broccoli and slice them roughly.



Step 2
Boil the barley in salty water according to its package. 5 munutes before the barley is done, put the broccoli into the boiling water too. Once this time is passed, put both in a strainer and cool under fresh water.









Step 3
Slice the tomatoes.



Step 4
Clean the shrimps and cook them for no longer than 5 minutes in a pan with some olive oil. When they are ready, put them into the bowl with the other ingredients and mix.




Step 5
Cover the bowl with plastic wrap and leave it in the fridge at least two hours befor serving.
