Instructions
Step 1
Saute onions until soft, add sausage until cooked thru.
Step 2
Add mushrooms and then rice.
Step 3
Deglaze with wine until partially absorbed.
Step 4
Add warm stock incrementally, stirring as needed. Add enough to allow rice to cook.
Step 5
Stir in spinach, if desired, then cheese and butter to finish. Serve.
