Instructions
Step 1
Rub the sweet potato with a little olive oil and season the skin with salt.
Step 2
Stab carefully with a fork and then microwave for 6-8 mins or bake in the oven at 180c fan for 15-20 mins
Step 3
Mix 100ml of vinegar with 50ml of water and 1 teaspoon of sugar.
Step 4
Slice the radishes into thin rounds and place them into the pickle mix and leave to sit.
Step 5
Mix the yoghurt with pesto, freshly chopped basil, lemon juice and zest and season with salt and pepper.
Step 6
Dice the halloumi and pan fry with honey and chopped basil stems until golden brown and sticky.
Step 7
To serve, cut open the potato and load with the freshly seared halloumi, top with yoghurt, a scattering of pickled radishes and spring onion.
