Instructions
Step 1
Peel the sweet potato and cut into 5mm 5hick stripes. Lithtly brush the sweet potatoes with olive oil and add to an air fryer, cook for 20 minutes
Step 2
Meanwhile, place olives to a small saucer. Squeeze in a lemon, add 1/2 tsp honey, add some olive oil, oregano, rosemary, thyme and season with salt. Put on low heat for 10 minutes.
Step 3
Place feta, yoghurt and rosemary into a blender, squeeze in a dash if lemon juice and season with salt and pepper. Blend until smooth.
Step 4
Assemble the sweet potatoes, dressing and olives and enjoy!
