Instructions

Step 1
In a medium size bowl, combine flour, oregano, thyme, and salt. Mix until well combined. Roll the chicken in the mixture, making sure to coat it on all sides.
Step 2
Heat up a large skillet over medium heat and add a generous amount of olive oil. Cook the chicken pieces in batches until golden and crispy on both sides, approximately eight minutes per side. Set aside once done.
Step 3
Reduce the heat to low and add the capers, lemon juice, garlic, and wine. Bring to a boil then simmer uncovered until the volume halves. Keep the sauce separate to put over the chicken.
Step 4
Plate the chicken and drizzle with sauce just prior to serving.
