Ingredients

2 x 14 ozandouille sausage
sliced

1onion
fine diced

1bell pepper
fine diced
1 cupfire roasted corn frozen
or can

1can diced green chiles

3cloves garlic

2 ½ cupswhite rice
basmati

4 cupschicken broth

14 oztomato sauce

1 tspsmoked paprika

1 tspCajun seasoning

1 tspsalt

½ tspblack pepper

½ tspdried oregano
Mexican

6 ozShredded cheese

sour cream
for garnish

0.5lime
for garnish

parsley
chopped, for garnish
Instructions
Step 1
Brown sliced sausage in skillet for 5-7 mins until colored. Remove and leave grease in pan. Sauté veggies until softened. Add garlic and green chiles. Sauté for 30-60 seconds. Add rice. Toast for 1-2 minutes. Add spices and tomato sauce. Stir until combined. Add chicken broth. Bring to a hard simmer. Cover and cook on low/medium low until liquid is absorbed (20-25min). Once done fluff rice and stir in cheese. Garnish with chopped parsley and lime juice.
