Instructions

Step 1
Defrost your prawns as per instructions on the pack - Remember this may take a few hours, when planning your cooking.
Step 2
Prep - Boil the kettle. Chop veg and cut the chirizo slices into quarters.
Step 3
Heat oil in frying pan on a medium heat and when ready add onion and pepper. Cook till they start to soften.
Step 4
Add chirizo, garlic and paprika. Cook for another couple of minutes.
Step 5
Add the rice and cook for a couple of minutes then add the half stock pot to 250-300ml of water from the slightly cooled kettle. Mix till dissolved. Add to the pan, stir thoroughly and then bring to a simmer.
Step 6
Cook for 20-30 mins until most of water is absorbed and rice cooked.
Step 7
You can add more water if the rice is still a little hard. You want a creamy consistency to your rice/sauce.
Step 8
Turn of the heat and add the frozen peas and defrosted prawns, stir in well and leave to warm through for a couple of mins before serving.
