Instructions
Step 1
In a mixing bowl, whisk together the flour, cornstarch and powdered sugar.
Step 2
In the stand mixer bowl, cream the butter, until smooth and lighter in color.
Step 3
Add dry ingredients and mix until all ingredients are incorporated.
Step 4
Cover and chill for one hour.
Step 5
Preheat oven to 300°F
Step 6
Shape into 1 inch balls. (I use the smallest scooper) Place them onto a parchment sheet 2” apart.
Step 7
Press firmly with a moistened fork to flatten the cookie.
Step 8
Bake in the middle oven rack, 18 to 22 minutes or until bottoms turn a light golden color.
Step 9
Remove from oven and allow to cool on baking sheet for a few minutes before putting them on a cooling rack to cool completely.
Step 10
Optional can dust with powdered sugar once cool.
Step 11
Makes approximately 30 cookies
