Crispy Onion Rings

Just in time for Thanksgiving, this holiday classic gets a healthy makeover! Improve on tradition with a better-for-you Green Bean Casserole that still delivers the crispy onions, creamy sauce and savory mushroom flavor that everyone loves.

Instructions

Step 1
Place cauliflower, chopped onion and non-dairy milk in a medium saucepan. Bring to a boil over medium heat. Lower heat to simmer for 30 minutes. Transfer mixture to a blender, add the nutritional yeast and blend until smooth.
Step 2
Preheat oven to 350 degrees F. Chop porcini mushrooms. Saute the button mushrooms in a small amount of water or vegetable broth until tender. Add the green beans, porcini mushrooms and reserved soaking water. Cover and steam for 5 to 7 minutes, or until the green beans are tender. Place the mushrooms and green beans in a glass casserole that has been lightly wiped with olive oil. Cover with the cauliflower puree. Bake for one hour, uncovered.
Step 3
Meanwhile, prepare the onion rings: In a medium bowl, mix together the almond butter, coconut aminos and balsamic vinegar until smooth. Add the onion rings and use your fingers to rub the almond butter mixture into the surface of the onions. Mix together the almond flour and nutritional yeast in a shallow dish. Dip each onion ring into the almond meal-nutritional yeast mixture. Place on a baking sheet and bake for 30 minutes, uncovered.
Step 4
The onion rings can be placed on the baking green bean casserole for the last 30 minutes of baking or if you wish to keep the onion rings as crispy as possible, you can simply serve them on the casserole after it has finished baking.
Step 5
Note: You can purchase almond flour at most large supermarkets or health food stores or make it yourself by processing raw almonds in a food processor until finely ground.
