Instructions

For the muffin

Step 1
Preheat oven to 350 Add all in the ingredients listed for the muffin in a large bowl except for the flour .

Using a electric whisk or by hand , whisk the mixture until smooth. Then gradually & slowly fold in the flout followed by the chocolate chips.

Use a 9 x 5 loaf pan. Add a sheet of baking paper over before adding in the muffin mixture.

Bake in the oven for 25-35 minutes. Or you can use the toothpick or fork trick. Poke it and if out comes out clean it’s done !

Allow to rest for 20 minutes before cutting into it .

For the custard

Step 6
On low heat , using a large pot . add the the milk and HALF of the sugar you’ve prep .

In a clean bowl add in your egg yolks and set aside . In another bowl whisk the other half of the sugar with the corn starch
Step 8
Once the milk start to get hot , mix the corn starch & sugar mixture into the egg yolks. Whisking vigorously until smooth .
Step 9
Using about 1/2 cup of the milk in the pot Slowly add a little by little to the egg mixture while whisking vigorously . We are tempering the egg so we don’t cook it .
Step 10
Add that mixture to the pot with the warm milk. and whisk like crazy. be patient , because it will take some time . You can turn the heat up to low medium but be very careful to not curdled the eggs.
Step 11
Once it thickens up , pass it through a strainer to get ride of any lumps. Add the butter and the vanilla extract. . Cover and allow it to cool in the fridge. ( 20-30 minutes)
