The kefir grain is not actually a grain but rather, a symbiotic polysaccharide containing both yeast and bacteria that ferment sucrose into a lightly sweet and bubbly brew that repopulates the gut with healthy organisms to balance the digestive and immune system.

Instructions
Step 1
* Add ¼ cup of sugar to quart jar.
Step 2
* Add water to the jar.
Step 3
* Stir until the sugar has dissolved.
Step 4
* Add 2 TB of kefir grains to the sweetened water.
Step 5
* Cover with a breathable cloth or coffee filter. Secure with rubber band.
Step 6
* Let sit for 24-48 hours – no longer than 72 hours or the grains will begin to die due to lack of sugar/food.

Step 7
Strain grains from water.
Step 8
Add 1/2 cup of your favorite juice to 1 quart of water.
Step 9
My family’s favorite is grape “soda”. That’s 1/2 cup organic grape juice.
Step 10
Add flavored water to swing top bottles. *1 raisin is optional for extra sugar the microbes to feed on and to give out more bubbles 😉.
Step 11
Tip* Store in a box while in F-2. Just in case one day a bottle may explode 🤯, it’s inside of a box and you won’t have glass pieces everywhere.
Step 12
F-2 can be ready in 12-48 hours.
Step 13
Store in refrigerator to slow down fermentation.
