Ingredients

1 Tbspvegetable oil
1onion
medium, chopped
1 lbsground turkey
or beef
1 ½ cupssalsa
1 x 12 ozfrozen white shoepeg corn
thawed
¼ cupvegetable broth
2 Tbspchili powder
1 tspground cumin
1 tspkosher salt
½ tspfreshly ground pepper
1 x 8.5 ozcorn muffin mix

1 cupwhole milk
1 cupshredded cheddar cheese

¼ cupsour cream

Instructions
Step 1
Preheat the oven to 375
Step 2
In a large skillet over medium heat, heat the oil until shimmering (about 2 minutes). Add the onion & sauté until soft (about 5 minutes)
Step 3
Add the ground meat to the onion & sauté, breaking it up with a spoon, until browned & cooked through (About 8-10 minutes). Drain off excess fat.
Step 4
Stir in salsa, corn, vegetable broth, & spices. Transfer mixture to 9x13 baking dish, smoothing it into an even layer.
Step 5
Bake until golden brown on top, 30-40 minutes. Remove & allow to cool for 10 minutes.
Step 6
Serve with cheddar & sour cream.
