16 ouncesPenne Rigate
Reggano
1 tablespoonOlive Oil
Pure
3bell peppers
assorted colors, sliced
2 cupsmushrooms
diced
1yellow squash
diced
0.5yellow onion
chopped
2garlic cloves
chopped
10 ouncesDiced Tomatoes with Green Chiles
25 ouncesMarinara Pasta Sauce
Organic
ground black pepper
to taste
¼ cupfresh basil
chopped

Grill sausage until cooked through.
Step 3
Cook pasta according to package directions.
Step 4
In a medium skillet, heat olive oil over medium heat. Sauté peppers, mushrooms and squash for 4 minutes. Add onion and garlic, continue cooking for 4 additional minutes or until peppers are tender.
Step 5
Add tomatoes, marinara and black pepper. Reduce heat to low.
Step 6
Slice sausage into ¼-inch pieces, add to sauce. Simmer on low for 20 minutes, stirring occasionally. Stir in basil. Serve over penne. Garnish with parmesan cheese, if desired.
