Cheesy pizza eggs

The effort to taste ratio is on point with this recipe. Could be dressed up with basil and/or pepperoni, but served here in simplest form. Egg yolks are cooked until jammy on top of egg whites and mozzarella with splashes of pizza sauce. The hardest part is separating the egg whites and yolks. I poured the eggs together into a small dish and gently poured only the egg whites in first using my garlic rubbed hands as the buffer.

Instructions
Step 1
1. Heat small skillet over medium heat with a drizzle of oil. Gently crack eggs into a small bowl with breaking the egg yolks. Carefully pour egg whites into the pan using hand to keep the egg yolks in the bowl.
Step 2
Gently stir egg whites around for 30 sec then add in mozzarella, Italian seasoning, and salt/pepper to taste. Drizzle pizza sauce over the egg cheese mixture. Cook for 1 min.
Step 3
Add egg yolks and simmer over medium low heat for 5-6 min covered until egg yolks become slightly firm to touch and surrounding egg whites of egg yolk are cooked through. Enjoy!
