Step 1
In a blender, add your chopped zucchini, garlic, pistachios, a pinch of salt and extra virgin olive oil. Mix everything together until creamy.

In a pan over medium heat, cook your bacon slices for 6-7 mins or until crunchy and set aside.

In the meantime, boil your spaghetti in some salted water until al dente.

Add your zucchini cream to the pan, along with your spaghetti and a drop of pasta water. Toss well over the heat to combine all the flavours.

Serve with your crispy bacon on top and a drizzle of olive oil if necessary.
